I love Mexican food, but I don't always love how I feel after I eat it. I try to stick with the recipes that call for less cheese and aren't as greasy as those tend toupfeeling like an anchor in your stomach. Really good Mexican food is neither heavy or greasy, but fresh, light and very flavorful. I've found recipes that are lower in carbohydrates, fat and calories while remaining true to their flavor. Be sure to go gently on the cheeses and the guacamole, and heavy on the fresh salsas. Instead of the burritos and enchiladas enjoy a soft taco with fresh fish, seafood or lean meat.Instead of white rice with your beans, try brown rice, or better yet, substitute the rices for quinoa. I love a good tortilla soup. Hearty, healthy and wholesome. Though often Cinco de Mayo is warm, and today our temperatures are expected to reach up into the mid 70s, so I will be saving this for a cooler day, but for those of you who are experiencing cooler, rainier weather, this may hit the spot. So Jerk Chicken isn't exactly Mexican, but it is so flavorful and so good, and if you like the spicy Jerk kick I say why not...
